What's your current system version? IMHO chances are high that you try to upgrade an older system (e.g. 10.13.6 or 10.14.6) with an 10.15.3 updater (which requires at least 10.15.0 (with a combo updater) or 10.15.2 (with the non-combo 10.15.3 updater). – klanomath Feb 7 at 11:08. So to recap :

- WiFi 5ghz disappearing issue after sleep mode : only installed OS X 10.15.3 catalina (fresh install)

- WiFi 5ghz no issues on Windows 10 Bootcamp / OS X 10.15.3 from Recovery mode.

So the issue seems to be Software related, probably a bug on the Wireless Drivers in MacOS Catalina.

If no resolve is forth coming from Engineers and Senior support—

then you may be in it for the long run. ie macOS 10.15.4—10.15.6 (?)

If it were me I would not hesitate to buy a simultaneous dual band router.
